  *140g water
  *250g white sugar
  *50g light brown sugar (or 14g dark brown sugar)
  *3g kosher salt
  *1/8tsp citric acid (or 1/4 tsp cream of tartar) FIXME Subbing citric acid here is the experiment
  *1/4 tsp baking soda FIXME We might need to up this if it's acidic
  *55g water for finishing
  *7g butter (Calls for unsalted, we used salted)
  *1/4 tsp vanilla extract
